Lent is more than halfway over, therefore I am almost over with my gluten-free diet. I wanted to do this diet for a few reasons:
1. To sacrifice something I love in order to think more about the Lord
2. To see if I had more energy without gluten
3. To be more aware of what goes into my body by thinking about what I eat
I don't feel like I have more energy, but I'm really glad I did it because I just feel healthier eating more meat, veggies and fruit. There are some really tasty gluten free recipes that I will share in an upcoming post.
